Gingerbread
1/3 cup coconut oil, melted
1/4 cup pure maple syrup
1/4 cup molasses
1 1/2 tsp. vanilla
1 egg + 1 egg white
Mix together:
1 1/2 cups + 2 Tbs. Almond flour
1 Tbs coconut flour
1 tsp. baking powder
1 1/2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
Preheat over to 350.
Mix together the wet ingredients in a small bowl.
In a large bowl, mix thoroughly the dry ingredients. Add the liquid mixture to the dry ingredients and blend at medium speed until well combined.
Bake in an pikes 8x8 pan for 20-25 minutes, until a toothpick inserted in the center comes out clean.
