Blueberry muffins have always been my favorite.
I like this idea of using almond meal to replace flour in pastries.
These feel healthy.
Grain Free Blueberry Muffins
In a food processor, grind 2 cups of roasted, UNsalted almonds to a fine meal.
Add right to the food processor:
1/2 tsp. baking soda
4 eggs
3 Tbs. honey
1 tsp. apple cider vinegar
1 tsp. vanilla
zest of one lemon
Mix well, then gently fold in:
3/4 cup frozen blueberries
Spoon into muffin tins and bake at 350 for 25-30 min., 15 min. for mini muffins.
